Ingredients
- 1 wheel of creamy brie cheese (12 ounces)
- 1 tablespoon fresh rosemary, finely chopped
- 1–2 cloves garlic, finely grated
- 2 teaspoons honey (plus extra for drizzling)
- 2 cups pitted Castelvetrano olives
- 1/3 cup extra virgin olive oil
- 2 tablespoons chili-infused oil (or additional olive oil with crushed red pepper flakes to taste)
- 1 tablespoon lemon zest
- 2 sprigs fresh thyme
- Freshly cracked black pepper
Instructions
- Preheat the Oven: Set your oven to 375°F (190°C).
- Prepare the Brie: Place the brie in a small oven-safe dish. Score the top in a crosshatch pattern using a knife. Rub the rosemary and grated garlic over the surface, then drizzle with honey.
- Bake the Brie: Bake the brie for about 20 minutes, or until it becomes soft and gooey.
- Prepare the Olive Mixture: In another baking dish, mix the olives, olive oil, chili oil, lemon zest, thyme sprigs, and a generous pinch of black pepper.
