Mediterranean Baked Fish

This Mediterranean Baked Fish is bursting with vibrant flavors from fresh herbs, lemon, cherry tomatoes, and a touch of spice. It’s a healthy and delicious one-pan dish that’s perfect for a quick weeknight meal or a special occasion.
Ingredients
- 4 fish fillets (cod, sea bass, or snapper)
- Salt and freshly ground black pepper, to taste
- 2 tbsp olive oil
- 2 cloves garlic, minced
- 1 cup cherry tomatoes, halved
- ½ cup black olives, pitted and sliced
- ¼ cup capers, drained
- 1 lemon, thinly sliced
- ¼ cup chopped fresh parsley
- ¼ cup chopped fresh basil
Instructions
- Preheat the Oven: Preheat to 400°F (200°C).
- Prepare the Fish: Season fish fillets with salt and pepper. Place them in a baking dish in a single layer.
- Add Flavorings: Drizzle olive oil over the fish. Scatter garlic, cherry tomatoes, olives, and capers around and on top. Place lemon slices over the fillets.
- Bake the Fish: Bake for 12-15 mins, until the fish flakes easily with a fork and is cooked through.
