Ingredients:

  • 1 ripe mango, peeled and diced
  • 3 cloves garlic, minced
  • 2 tbsp honey
  • 1 tbsp soy sauce
  • 1 tbsp rice vinegar
  • 1 tbsp lime juice
  • 1/2 tsp chili flakes (adjust to desired spice level)
  • 1/4 tsp ground ginger (or 1-inch piece fresh ginger, grated)
  • 1/4 tsp salt
  • 1/4 tsp black pepper
  • 1/4 cup water (to adjust consistency, if needed)
  • Instruction

  • Blend the Mango: Place the diced mango, garlic, honey, soy sauce, rice vinegar, lime juice, chili flakes, ginger, salt, and black pepper in a blender or food processor. Blend until smooth.
  • Simmer the Sauce: Transfer the mixture to a small saucepan over medium heat. Bring to a simmer and cook for 5-7 minutes, stirring occasionally, until the sauce thickens to your desired consistency..
  • Adjust Consistency: If the sauce is too thick, add a bit of water to thin it out and stir well..
  • Taste and Adjust: Taste the sauce and adjust the seasoning, adding more honey for sweetness or more chili flakes for heat, as needed.
  • Serve: Remove from heat and allow to cool slightly. Use as a glaze for grilled chicken, shrimp, or pork, or as a dipping sauce for appetizers like spring rolls or fried foods
  • Variations

  • Smoky Flavor: Add a pinch of smoked paprika or a few drops of liquid smoke for a smoky twist.
  • Creamy Version: Stir in a tablespoon of coconut milk for a creamy texture.
  • Herb-Infused: Add fresh cilantro or basil for an herbal flavor boost.
